That's on you. I left an employment in 2011 and they still monitor my email. This former employees email should be getting forwarded to somebody in your organization.
While I agree with Mark in principle, I hate the guys that just send off an Email, have no response, and assume that everything will just happen for them. You should also set up an Auto-Reply on the former employees email saying either that that email address is no-longer monitored or that The email is no-longer used and has been forwarded to

Sure, follow up with an 'As discussed' email, for record keeping, but the initial conversation should always be spoken where possible.
They're lucky us simple country surveyors even have email; as it is I'm going to have to round up a second team and wagon so I can split the field crew up.
