Are there digital image files of subdivision plats in Salt Lake County? I'm trying to find downloads of a couple of plats, but I'm not sure where to go.
Any help would be appreciated.

The subdivision plats would be in the Salt Lake County Recorders office. It's an online system but not free. You'd need to either pay to become an account or walk in and get it across the counter. I don't have an account. Maybe you could find someone who does. If you are working with a title company they could probably get it for you. Some surveyors might have accounts but I think it's $100 to sign up and $25/month after plus a charge for each document. Google the website.
Surveys are filed in the Salt Lake County Surveyors office.

Darn Countys who think serving up public documents should generate a revenue stream! Threatened litigation in this neck of the woods, followed by an Attorney General's opinion, put a stop to it.

Running a recorder's office isn't free and these days there probably isn't any general fund money to pay for hence they have to charge for copies.
