We used a "Hydrolite" depth sounder to survey the bottom of the Cimmaron River a while back and it worked well. They are advertised every month in all the magazines.
Lead lining only works if there is no current and no wind. Which means hardly ever.
Check out SubSea Technologies web site, they have any/all equipment you'll ever need for Hydrographic surveys On-Shore, or Off-Shore. Sales, Rentals and Training.

Similar to what we use as well. We use an old Brass Plaque PSM that was pulled out on a construction job.
They also make decent paper weights.
If you are to survey a lake or close to shore areas then the most economical would be a commercial grade fishfinder with internal/external gps and SD card data recording.
your DGPS would be used together with the Fisf finder gps to get the accurate heights then time match to the fish finder's gps readings.
