With our children either traveling or having to work on Thanksgiving Day we had our feast yesterday.?ÿ Smoked turkey breast, dressing (we don't do stuffing in the south), green bean casserole, sweet potato souffle, and broccoli salad.?ÿ Then followed up with pecan pie.?ÿ Then a nice long walk to get everything digested.?ÿ Now for leftovers for a couple of days.
We all have so much for which to be thankful if we just take a few moments to think.?ÿ I hope you all have a safe and joyous Thanksgiving.

Giblet gravy-Deep Fried Turkey with creole seasoning in P-Nut oil- dressing of course made from two day old skillet cornbread and celery eggs and smothered in giblet gravy. ?ÿ
We alternate smoking a turkey vs deep frying for Christmas and Thanksgiving every other year. Deep frying is a family ritual. The kids love playing doctor as they inject the bird. ?ÿAnd their favorite is cooking day. As i get the oil heated up the kids get to smother the skin in mustard. My wife usually has the sides all finished a day before and many many pies.?ÿ

Giblet gravy-Deep Fried Turkey
I used to deep fry turkeys.?ÿ But the dang peanut oil got so expensive that I just couldn't justify the expense.?ÿ I also have an "Oilfree" fryer too.?ÿ It's about as good as deep fried.
My wife makes dressing made with leftover cornbread and biscuits.?ÿ Add onions, celery, eggs, sage and of course drippings from the turkey.?ÿ Then when it's done you cover with the giblet gravy.?ÿ Yum.

'fixin' to fire up my 30 yo TEC Patio 2 grill and rotisserie a roast while the girls cook the turkey with their mom's stuffing recipe - one forgot the innards bag one year.?ÿ Two pies and a cheese cake prepared yesterday. Not sure if conversation will center on politics, religion, or Medicare.
Leftovers will be going home with the guests.

A few years ago we looked around and realized we were the only family couple both young and old enough to host for the holidays. Our children are spread around the world so we have a few international students stand in for those not present. The crowd is about 30%vegan and 25% gluten free. We put stuff on the table the pilgrims never heard of. Lol

Sounds like our Christmas Eve meal.?ÿ For years we have had crackers, lots of different cheeses, apples, oranges and summer sausage.?ÿ That's the only time of year that I eat summer sausage but it's part of our tradition now.

@andy-bruner The oil has become ridiculous high. It bit me this year. I usually try and buy way earlier in the year in bulk and its not as bad. I might have to resort to smoking only in the future or get another job just to pay for it. When a kid we got it in a 20 gallon drum. ?ÿAnd it was used year around for chicken etc. ?ÿWhen Thanksgiving rolled around everyone came to cook their turkey. We cooked 5 birds one year for family. They did 15 for a church once. We had several big pots on custom made stands. Literally had shovels sterilized as big spoons to rotate the birds. Yeah now days about the only way to come out with the oil is to have a few neighbors chip in and share the cost of the oil. You can run the cooked oil back through cheese cloth and re use it but you do take a chance.
