Actually, go out on the point to Oceanside. Nice little place with good food and a great beach with a tunnel through the point, and good agate hunting!

There is some, but fairly narrow.?ÿ The Cape Meares Lighthouse is awe inspiring. But no beach at all.?ÿ Cannon Beach is a much nicer beach.?ÿ?ÿ

I got off of the New Jersey Turnpike to get gas.?ÿ So the guy is pumping the gas and I said you know New Jersey and Oregon have one thing in common? What's that he asked, they both require an attendant to pump the gas.
That's better than the unsolicited conversation I get from the attendants (A), e.g:
A: So how's your day been mate?
Me: It's four o'clock in the morning, so it hasn't been anything yet.
A: Yeaahair he he he he he he heh, hair.
A minute or two of crickets.
A: So how's your day been mate?
Me: Crickets.

With only a week here in the Willamette Valley, and you being close to the coast, I would suggest going to see it.
Lincoln city is not too far away, and they hide glass floats there!
Multnomah Falls and surrounding waterfalls like Horsetail, Bridal Veil, Wahkeena, Shepherds Dell, and LaTourell, are all along the highway back from Multnomah Falls. Probably an hour or so from where you will be staying. Most of them are viewable from the car, but also a very easy walk.
Herman the Sturgeon and his friends are another 10-15 minutes drive from Multnomah Falls. They live at the best fish hatchery I have ever been to. I believe it is government owned. You can feed the Trout, Salmon, and Sturgeons! I take a plastic cup and a bunch of quarters and fill my cup up and go pop it into the fishies mouths. They love it. You can also cross the Dam here and go to the Army Corps building.?ÿ You get to drive over the locks, the dam itself, and some other crazy stuff to get to the dam building. There's a gift shop, and fish viewing windows, and other neat things that Surveyors seem to like.
If you go into Downtown Portland, expect traffic. It's crazy! If you want a beautiful view of the downtown city (and lights at night), go up to the 30th floor of the US Bank Pink Building to the Portland City Grill. Park under the US Bank building and get your parking validated at the grill.
The "view side" is the cheaper food side. They serve the cheaper food thats from $4-$12 VS the steakhouse side which is about $60+!
You can walk to VooDoo donuts for dessert from this building.?ÿ It's only a block or two. The donuts are more a "cult hype" than anything. They're good, but not like super fantastic good. Very sweet donuts. Cash only at VooDoo.
Powells Books is always fun! Worlds Largest Independent bookstore! FLOORS of books! New and Used.
And...there is NO sales tax here. The price you see is the price you pay. If you wanna buy a fancy laptop, go for it!
And, the guys are correct. No pumping your own gas here. Unless you're on a reservation. Then you have to pump it yourself.
And, DRIVE THE SPEED LIMIT. They DO pull you over here if you speed.?ÿ ?????ÿ

Malheur Wildlife Refuge, Steens Mountain, Alford Desert... SPECTACULAR country! But another 3 hours SE/ly of Bend, and you??d want to have at least a few days to have a ?ÿdecent look ?ÿaround.
I am partial to the Oregon coast, say between Oceanside or Manzanita and Astoria, most people are gaga for Cannon Beach but my favorite part is Astoria, especially Fort Stevens State Park (the terminus of the Lewis and Clark expedition) and maybe a bite at the Colombian Cafe although it has been some odd 15 years since I have been there.
This is an impractical suggestion unless you really like driving though, especially with a trip in the opposite direction already in the works.

My Brother and I, along with our Wives, are planning to head out to Portland area in July to drink some wine and eat a ton of food. Never been to the PNW so I plan to grow a beard to try to fit in with the locals, I am 2 weeks in so far... My Brother booked our place(s) at the Allison Inn and Spa (happy wife-happy life). So I reserved a Suburban/Excursion for the week and ordered a Ted Nugent Shirt?ÿ 🙂
Any ideas or suggestions? I plan to drive over to Bend one of the days for some Deschutes Chain Breaker straight form to source. Any other good Breweries in Bend that I must hit up?
As for wine...We plan to visit Erath, Sokol Blosser, Stoller, and Brooks.?ÿ

Local PDX area Wino here. I have been to all that you mention and have tried many many others in the area. I keep trying to knock more wine tasking adventures off the list but the damn wineries keep multiplying out here faster than I can get to all of them. Same goes for Breweries.
Out of your list of wineries. most are going to drown you out in Pinot's which is great until you are on your 3rd or fourth stop and the tasting menu has another 4 or 5 pinot's to try....?ÿ If that is all you want in the day great, but personally, we like to throw in some different varietals and I have listed some below. Here are some comments and thoughts.
Erath - One of the First and original Wine estates and worth a visit just for the history and tasting of what an Oregon Pinot should taste like.
Sokol Blosser- Been there, tasted them, but I choose to go elsewhere for the price point and comparable wines.
Stoller - Beautiful place and great wines. More Pinot.
Brooks, Never been but I will try next time I'm in this area. We typically Love to go to Methven winery when we are down this far south, They also have a newer tasting room in Dundee.?ÿ
If you want to break up the Pinot, you don't have to go far. Stop in at https://www.bravurocellars.com/ in Newberg if you guys are into big reds.?ÿ Owen Roe is another tasting room in Newberg that has bigger blended reds from around the state.?ÿ Some of My favorites you can look into would be, Four Graces (Pinot's), Dobbes Family Estate (Lots of choices), Argyle (They have bubbles and my wife loves this), Ken Wright (Pinots), Troon (Southern Oregon big Reds).?ÿ If you want to try some of the highest end pinot's I've ever had, look into Archery Summit.?ÿ Beautiful place but each sip is expensive. We have a bottle maybe once a year on a special occasion.?ÿ I listed just a few here based on the area you are in. We also do a lot of wine tasting a bit further North, NW or Newberg.
If you would like to check out the waterfalls in the Columbia River Gorge, (My backyard as I live in Corbett, OR) do yourselves a favor and only go on a weekday. Multnomah Falls, Horestale Falls, Vista House, all get dreadfully busy on the weekends.
What kind of food? There are so many places. Italian, Asian fusion, local PNW? Portland is a food mecca and many places require reservations, some of those that don't just keep in mind that many Portlanders have no problem waiting for an hour or more to eat good food.?ÿ ?ÿFeel free to follow up with an email if you want or I can check back in here.
