Would anyone have an example survey plat that they wouldn’t mind sharing that has an aerial photo in the background for me to get ideas from? Have a client asking for an aerial photo as part of his survey plat and I can’t seem to work out colors of lines/text on top of the image that looks professional/good.

Many times I've used 'white', color 255 in CAD, especially if I'm printing the aerial imagery full color or dark. Otherwise, with a faded image, black and red work fine. Probably may other darker colors would be fine on a lightened background as well.
I agree, it’s been a while since I’ve done it but in Land Development you can fade the images and mess with the contrast to make your line work show up better.
If you apply a "fade" factor of about 50 to the image it will be muted enough that your standard black lines will stand out. I think what you are really asking for is a lineweight (ie/thickness) set up that looks good.
I think Norman has you point in the right direction. I have never done a play but making maps on imagery in GIS. Cyan a good line thickness shows up really well on a black and white image with transparency set around 50 percent. If your images are color then you have to really increase your line thickness to make it pop. You can exp with many colors. Line styles and the thickness. Any blocks/symbology you will have to do the same. You might need to scale them up a bit depending on where they land what your symbology is made up of.
Just did this in the fall. I gave them two sheets - one with all the good stuff and one with the aerial.
