Just thought I'd throw in:
I recently picked up the 24" roll version of the 500 for my startup(the seller said it was 8 years old). I used "add a printer" to install> hit the windows update button and got a working vista/ win7 driver (local/ usb port).
Found print-heads, ink and additional ram on ebay (mine came with the hp/gl2 card, but it didn't like the ram... oh well). There are decent priced rolls of 20# 'bond' as well.
I use a very simple pen table with c3d (colors 1-15 with 1-7 being black and 8-15 being grey (30% screen of black), using different pen widths to enhance the look.
If you don't know HP design-jets, they are relatively slow to plot a 24x36 (no slower than almost any HP, but way slow compared to the laser plotters you find today). Still, very high quality line work, imo.
