I stumbled upon this forum just a few weeks ago and was reading loads of helpful stuff since. Actually I just created this account in the hope that I might be able to help now too.
About your question for books about tunneling there is some narrowing down of the options required prior to start...
What is it exactly you are looking for? Microtunneling (e.g. pipe jacking), segment lining or drill and blast? Is it about the standard surveying, e.g. network measurements, you are looking for information or is it more about geophysics?
Maybe I can help you, but I would need a little more input...
