Here's an Army training manual for meteorological observers from 1925. Beginning with PDF page 226 (actual page 209) are several methods for determining True North. The astronomical observation description is particularly interesting in that it gives a check method.
Rules for adding and subtracting compass declination with regard to observations is also interesting.
Old, old school methods for sure.
