Never ate alligator, but find catfish quite tasty, if somewhat bland like tilapia.?ÿ 'Muddy' or 'musty' flavors are normally caused by?ÿgeosmin?ÿand?ÿ2-methylisoborneol, organic products of ubiquitous?ÿcyanobacteria?ÿthat are often present or bloom sporadically in natural water bodies and soil.?ÿ Farmed catfish do not have this problem, as the fish food is floating pellets, so they do not bottom feed.?ÿ
I'm not the only one who likes farmed catfish, about 340 million lbs are farmed annually in the US.

If you are cooking your own catfish be sure to fry the fins like a potato chip. They are rich and very good.

That is precisely the phrase I have used many times since my 1990 excursion to the National Association of School Board Annual Convention in N'awlins.?ÿ The typical response is, "What did you say?".?ÿ Then I tell about having a snack with several school board members from various states one afternoon as we strolled around the city.?ÿ All but one of us tried "gator on a stick" somewhere near Jackson Square.
It may have been about 10 hours later I was leading some "first timers" down Bourbon Street when this knockdown gorgeous gal passes us up.?ÿ Three guys just ahead of us saw her and one of them was suddenly in love.?ÿ I overheard him telling his buddies he was going to follow her until he could introduce himself.?ÿ Then she turned into a place featuring female impersonators.?ÿ When he heard the doorman tell her she was on in five minutes he about died of shock and his buddies roared in laughter.?ÿ A couple of prim school board members thought maybe they should check out the show.?ÿ What you see in N'awlins had better stay in N'awlins.?ÿ The rest of us checked out the female mud wrestlers.
