Really, the kid does have a neck 🙂
Last night he was upset when his empty bottle was removed from his mouth (after his bath)...he got so mad he breathed in and stopped breathing for 15 seconds, geez that kid scared me to death...don't remember the girls doing that...trying to breath in (we are all saying "BREATHE JAMESON!!!")...turning red then a sudden outrushing SCREAM!!! Finally walking him up and down the darkened hallway calmed him down then he zonked out on his Grandpa bed, leaning back in my recliner and I fell asleep, he was already sound asleep on me (I don't think anyone took a picture of that).
He has done the stop breathing thing before but for like half a second, never like that. He can't be choking on his milk.

Assuming he was in his crib and ready for "nite nite" let him fall asleep prior to the bottle retrieving exercise. Or let him keep it all night. It will be on the floor by morning. 😉
my daughter would do that...
As an infant, when my daughter would fall or otherwise suffer a "cryable" injury, she would let out her first breath and just hold off on the inhale for a length of time that would scare me and Mom. We learned to breathe a "blast" of air in her face and she would then breath, and cry, normally. Perhaps give that a try.

One of my boys does the inhale...pause....mighty scream. It's only a few seconds but definitely long enough to think "uh-oh, here we go!" Considering that he's a bit high strung, it happens more than I wish (he's now 2-2/3rds).

When my son was being a real pill for no reason, I would blow in his face, which would cause him to hold his breath (some sort of instinct thing). Either way, it made him stop crying. About 2 seconds later, he would start screaming again.
Do that a couple times and he would be so annoyed with you that he would forget what he was crying about.
