Hello, I would like to create a template for the contours label.

I have my drawing in metric but when I go to annotate -->surface-->contours appears in foot why?

I know how to change each time with edit survey style but is time-consuming.

How I will create a template for metrics?

I think is something to do with survey styles.

Yep - you need to change the label style for the contours. Select a contour label, open the properties pane, and then look at where it says "Surface Contour Label Style Major [or Minor]". Click on the dropdown and select "Create/Edit".

Then pick the style you want to edit, go into the Editor, then the Layout tab, and find the Text/Contents section. Open that, and modify the "Surface Elevation" property to use meters instead of feet.

You'll also need to change the ambient settings for Distance under Drawing Settings to meters if you haven't done that already...
