Unfortunately this answer involves spending money. Adobe's Acrobat does the job well. Nuance's PDF Converter also does the job for a lower price.
Looks like I have Adobe, maybe I need to dig into it and see how this works...

Hmmm. I have one of those too...
When the text is not readily available through the pdf, I have been using Microsoft OneNote for my OCR needs.

Pretty simple. Open the pdf, then saveas .doc or .docx. There is a setting someplace that regulates whether OCR is performed or not, but the default is to do so.

On my Adobe Reader XI under tools and export is where that's done.
I've never used it however so I can't speak to how well it works.

I'd quite forgotten about Adobe Reader. Reader is free, but OCR services cost money.
