Jalopeno-eggs-cornbread

Jalopeno-eggs-cornbread:
Grate 2 large jalapenos into a cast iron fry pan with olive oil and salt. Fry, while turning it with spatula, until it turns from green to black.
As soon as it turns black, crumble 2-3 squares of cornbread into the pan, and scramble it. Fry while turning it until the cornbread is toasted.
Now, add 2-3 jumbo eggs. Cook till done. Now, top with cheese.
Top with sour cream, and salsa.
Serves 2.
Enjoy!

I made up his recipe, while wife was doing morning sickness.

Sounds good.  I might try that if I ever have any leftover cornbread..it usually gets all gobbled up before it has a chance to get cold!

Here's a recipe I made up the other day in one of my "throwin'-sh*t-in-the-skillet" sessions:

I had some ground beef thawed and thought meatloaf might be nice.  I'm digging around in the cupboard and realize I don't have any bread crumbs.  Saltines are a good sub, but I didn't even have any of them around. 

Then I spied a box of Stove Top instant stuffing.  I figured what the heck.  I mixed couple of eggs, some diced onions, a thumb of butter with about half the box of stuffing (I only had a pound of meat).  I added a little more whole milk to the mix that I usually do because the stuffing gets pretty thirsty.

It was a little sloppier than my usual recipe but it made it into a the pan.  45 minutes at 350 and I had the tastiest meatloaf I had made in a while. 

PS - It was the "Savory Herb" flavor.  I think I might try the "Sage" flavor next with some ground pork mixed in with the beef.

Olive oil instead of bacon grease.  Next time it’ll be Avocado oil.

Ain't tried avocado oil. But, I do like avocados, guacamole dip, and Mexican food.

Why would anyone damage perfectly good cornbread with any of those ingredients?  As a kid, I would crumble corn bread into a bowl with some cold cream out of the refrigerator and out of the milk cow yesterday.  Ummmm Ummmm Good

Too much trouble. Just two slices of toast with lots, (1/2") of cold bacon grease (aka:solidified bacon oil) on 'em. Does wonders for your health.

Hey, you need to cut that out.

SWMBO loves to cook and bake and is really good at it. She only uses the bacon drippins' for seasoning. Haven't had any fast food since retirement. I miss it too, but my Dr. is some kind of health nut and sez don't eat it.

Before my last yearly checkup I had been on an ice cream binge.  My doctor (ARNP) said she would let it pass this time, but if my triglycerides were up next time I was going to get a serious lecture.

Oh, how I miss that ice cream.

Oh, how I miss that ice cream.

Me too but I switched to frozen yogurt. It's good, well it's better than nothing.
