Never had sausage from rabbit or rattlesnake.
I do like a whole grilled/smoked rabbit and rattle snake portions about half the size of my thumb tenderized and dipped in batter and deep fried is mighty tasty.

With the exception of Number 4 everything else looks pretty darn good, especially the Seafood Etouffee. 😎

Neglected to mention the menu is from a restaurant in Denver. They should have local rabbits and maybe even a rattlesnake or two but that lobster probably isn't locally produced. I have no idea if the quinoa are in season yet are not.:confused::confused:

For seafood in and near Denver, one might consider Rockey Mountain Oysters. But not me. That is one thing on the list of items that will never cross my lips and hopefully never be seen by my eyes.

Rattlesnake isn't so bad. I've had it served in the form of a crab cake and it was quite delicious!

I had some little Gummie Lobsters from a dispensary off of Colfax last time I was up there. They came in three or four different colors. I liked the blue ones the best.

I must have gotten some sort of bug from them though...I felt funny for a while. It took almost two days for me to get back to norbal.

I would stay away from this place. The split pea soup would be my option. I like a nice pinch of cumin in split pea soup. It takes it to another level.
Had a friend who tried to get me to eat rattlesnake but I didn't care to try it. Tried to get me to eat coon too. He had all kinds of gamey stuff in his freezer. He said rattlesnake tasted like chicken. I'd rather go to Popeyes if that's true.
The seafood etoufee' soup sounds barfy to me. Etoufee shouldnt be a soup. It somewhat the opposite. It's a roux gravy sauce that smothers the crawfish over rice. Plus blending the 3 seafood ingredients is weird.

I think people are suspicious or disdain quinoa because it has too many vowels and can't pronounce it correctly. (Keen-wah). It's just a simple grain like wheat, bulgur, rice etc. Blended with rice it produces a nutty flavor.
Near East sells a blend with rosemary and olive oil that is ok. I think it's expensive so it is stretched by my mixing with rice.
Good as a side dish.
I has some last week as a side with creamed spinach and pan saut̩ed fish.
It's ok and innocuous in taste.

Years ago, I had some authentic Mexican food in Denver. It's odd. The 3 places that I have had the best authentic Mexican food has been in Houston, Denver and Chicago.
