It appears to be the word lilac, which is closely related to the privet bush. I believe privet is common in East Texas.

The double "s" written as "fs" is more common among scriveners of about the age of Gibbs who were also educated in the East. The 19th-century surveyors who grew up in Germany are usually identifiable by the letter forms they use, particularly in the capital letters.
