Perhaps more geodesy related is the Modern Navigation course at MIT. Lectures and other materials for the class are available via the Open Course Ware project. http://dspace.mit.edu/handle/1721.1/39820

Also check out a Professor Calais' course (and links!) at:

http://web.ics.purdue.edu/~ecalais/teaching/geodesy/geodesy.html

Great deal of other resources on-line. Perhaps others will post their favorites.
