Probably because they put mayonnaise on everything. I am reminded of Bruce Willis complaining about it being put on his hamburger (although they were supposedly in Montreal, but close enough to France) in "The Whole Nine Yards"
Anyone else perturbed about a restaurant (other than the fast food joints) "deciding" for you what condiments go on YOUR burger? There was one in Juneau that when I went?ÿ to put ketchup on my burger, they had already put mustard (plain yellow mustard, not my favorite, and maybe had put Mayo too) on it.
That's why I can always count on In-N-Out Burger...They make it how I want and then some! ??? ??? ????ÿ

@richard-germiller Ah yeah this makes sense.?ÿ I've heard how popular mayo is in France (and Italy).?ÿ I'm one of those who always special orders my burgers for similar reasons.?ÿ I prefer adding my own condiments
