Kale chips.
First of all, why would anyone willingly eat something better suited for livestock.
Second, if it looks like dried tree leaves painted dark green, it just might be kale chips.
A few days ago I attended a potluck dinner where one of those in attendance was a recent transplant from Mississippi. She brought kale chips. Honest to Pete, I thought they were tree leaves, only too green.
You shouldn’t generalize because no one is eating kale chips around here that I know of anyway.
There is an ornamental kale (multi colored leaves) that is grown here for borders on flower beds but it is not eaten. It is frost tolerant. I have mentioned to people here that it is edible and they just give me a strange look. The preferred greens here are collard, mustard and turnips in that order. But kale is probably the most nutrient packed of al the green leaf veggies. It is widely used in C=Chinese cooking. An old friend of mine from HS/college who trucked farmed in South Jersey would grow a lot of it in the fall/winter for markets in the NE along with sweet potatoes. Once I helped picked on a cold day in Nov. and got frostbite on the tip of my index finger because I had a hole in my glove.
My brother who lives in FL travels around the country a lot now. He was recently in Oregon and was having a salad in a café when he came across something to his distaste. He asked the waitress what it was and she said nit was nettles. He kind of gave a strange look at her and she told him that it was a wild nettle that grew in the forests there’re and asked him what grew in his forests in Fl and he replied “gators”.
Next time ask her if she makes kudzu chips.. that should get a grin out of her.
IF'N YOU AIN'T NEVER HAD A BIG BOWL OF KALE AND TURNIP GREENS, YOU AIN'T NEVER LIVED!! Throw in a bunch of cut up bacon and you are eating the food of the gods. Only thing better is a bowl of butter beans and whole okra with the mandentory bacon pieces or some fat back. It ain't our fault that SOME folks don't know good eating!! But then I suppose you like to eat that "escargot" mess.:-X
add some fried catfish and you have the perfect meal.

Hell if it wasn’t for all us southerners y’all snow lovin fools would still be eatin tree bark and dirt.
I ain't neer heard of kale chips neither.
Think I’ll cook up some cornbread and grits to go with the smoked mullet for dinner tonight. If I can find some recipes for bark I will forward same to your Divine Udderness.

I just planted a bed of kale.
Cooked down with some garlic and crispy bacon bits, it is some really good stuff. I like it better than most other greens.
I don't care for it as much fried.

It sounds to me like it's the fried bacon that is the key ingredient to making those southern vegetables taste so good.

Not always. Sometimes it's the ham bone in turnip greens that make the difference.
