I've been have a hankering for some Dirty Rice, but "sticky" rice is the worst thing for a diabetic (me). So I figure I will try to make it w/o rice.

Guess I'll simmer green pepper, onions and celery in chicken broth, seasonings and then throw in some ground chuck (I know, I know, but this is the 'Florida cracker', not cajun version.) Can't put hot peppers in either, as wife wants some.

Will see how it turns out. Boy I miss my carbs...

Steve: consider making it with brown rice....when we are on a low card kick, that is what we do.

Easy to say...sitting in Broussard's Cajun resturant in Cape Girardeau MO....eating some fantastic jambalaya and drinking ice cold Budweiser...

Life is good!

You can make it with wild rice or a good brown rice according to my diabetic cook book.

Thanks Dan,

I could not imagine putting oleo (instead of butter in it, and I tried the mushroom soup and well, no), but I enjoyed the video.

Thanks Tom, I imagine that the brown rice would get into the blood slower.

It turned out ok. I slipped some backyard jalapenos into it for a while and my wife did not notice. But since she forgot to get celery, I added some sesame seeds (and poured too much) and she didn't like it.

Love Brousard's and will drive out of the way to eat there. Most people I have taken there get a little scared when they see the place but are easily swayed when they start to eat!!

Now you got me thinking I need to make a trip...

Yeah Broussard's.... what a great place to eat.

I went to college in Cape in the mid and late 70's and remember when Broussard's was called the Town Pump....good place then too...

My girlfriend at the time...now my wife of 32 years...loved to get the braunsweiger sandwiches....I cannot stand them....but the beer was always cold.

Ate lunch at Dexter BBQ today....

You being an old MoDOT guy...know all the good places to eat!!! That is how MoDOT plans a trip...by where to eat!
