Jambalaya

I was going to make Shrimp Jambalaya for supper. The package mix I have is for chicken and sausage. It says if you are going to use shrimp, leave out the sausage.

Is it bad for you to mix shrimp and sausage? Or will it just taste bad?

I've seen dozens of recipes for jambalaya that used both (or all three).

I'm guessing it may have been an economy measure, if anything.

The beauty of jambalaya is that you can put in almost anything you want.....andouille, vension, crab, alligator, ham, chicken, turkey, oysters, and almost any other meat or fish.

Just don't forget the trinity.........:party:

Heck Dan,

I’d just boil the shrimp separately, heads and all, then after they are done throw some corn on the cob in the same pot with the shrimp juice in it. Then eat the Jambalaya, with sausage, chicken, fingernails, body hairs etc. as a side dish. Of course with beer and none other than Louisiana hot sauce for some kick.

Kinda my thoughts as well, jambalaya is for chicken and sausage.

For folks who catch shrimp in the gulf, they'll throw a pound of shrimp into just about anything.

A little late to the game but here is my take.

You use chicken and shrimp if you want a mild Jambalaya and sausage if you want it with more bite. So it will not taste bad using all three but it may not be as mild as you would like yours. Depends on your taste. I like mine to be very spicy so have never used shrimp or chicken for that matter.

If you use seafood them make sure you don't add the shrimp until after 10 minutes of cooking time. If you use Zatarain's mixes then usually it takes 25 minutes total so put in the shrimp with 15 minutes left.

I'm not native to Louisiana but I've never actually seen Jambalaya done with shrimp or chicken either. Maybe it's just the places that I've eaten but I did work in the area for several years and ate at a lot of places.

Just for the record, Radar, I will try to explain myself and my comments.

Yes, I was born in New Orleans and raised in SE Louisiana. My maternal grandmother is of Acadian descent and I spent a lot of quality time on her family's farm on Bayou La Fourche.
My Uncle, Clifton Richard, (Ree-shard) also was a fisherman and did his fair share of shrimping.

Shrimp jambalaya was never something that was served to me as a child and it is not something that I would cook to serve to my family. (I could think of many other dishes that we would prefer our shrimp to be in)

We eat sheeet loads of jambalaya around here, it is served at just about every function you could think of, from family functions to political gatherings, and it is always with chicken and sausage.

I have never eaten shrimp jambalaya, nor do I have any desire to start now, I can think of so many other things that I would prefer to do with a pound of shrimp.

I will give you a few of my preferences:
Shrimp and okra gumbo.
Shrimp etouffee.
Shrimp creole.
Barbecued shrimp.
Boiled shrimp.
and many more.
Hopefully you understand what I was trying to say, even if others could not. (Read: They are so smart they are stupid)

Can't imagine why someone would intentionally pick a fight over what appear to be personal dietary preferences.

As someone else implied above, stuff like this seems like hard feelings spill-over from P&R arguments.

Is it so hard to believe that people who have different political views can't have valid food preferences?

Thank you Dan, now I understand the disclaimer on the packaging.

Now, can you send me a recipe for the shrimp creole? 😉 (we ended up going to Taco Bell and my Granddaughters skate night and will be having the shrimp tonight)

I'm going to have to lean with Dan on this one. Shrimp is better off NOT in Jambalaya.

But I'm disadvantaged, I hate okra and that's in to many fine Creole/Cajun dishes....

Well, to be honest with you, we have a somewhat hectic life, with our two daughters, so I am not going to be opposed to using Zatarain's shrimp creole mix and "doctoring" it up.
It will get a good meal on the table rather quickly.
Granted, the traditional method is much better, but the doctored version of Zatarain's is still damn good.
I'll have to look around, but I am sure I could come up with a traditional recipe that my mother would use. Just LMK.

What do you do to "Doctor Up" Zatarain's shrimp creole mix?
