When I first started surveying we seldom broke chain to keep it horizontal. we used 100' chains and 300' chains and had a Abney that we could use to obtain vertical angles if we weren't measuring from the trunnion mark on the instrument. Doubtful that those recommending breaking chain have done much surveying without modern equipment. Get something to measure vertical angles with and measure along the slope where you can and as far as you can, looks like some parallel offsets might be required. Get a small area to search and use a metal detector for an iron monument. If you find something find some way to prove that it is probably the correct marker before you hang your hat on it.
