Gumbo looks delicious.
Roast is in the pot which will be had with some squash/potato surprise for supper.

If those "authentic spices" include file, you can keep it.
Don't get me wrong, I dearly love Cajun & creole cuisine. But some time back somebody filled a jar full of dirt and called it file. Whatever you put it in tastes like dirt to me.

Well....generally, you would never see this kind of food around here so it's a real treat. And I'm pretty sure that it doesn't taste like dirt....

I wasn't trying to put down your chow..it DOES look good. I just can't stand the 'spice' file.

Tried and don't have any desire for chicory coffee. What's that? Some sort of trickery?....
Gumbo looks real good.
My choice for Cajun style gumbos are from the Breaux Bridge area a little west of Lafayette. very dark roux.
Boudin looks good too.
As for file gumbo, eater's option. Jar of file will be on the table. Your choice to add a pinch to a seafood gumbo.
File (hand ground sassafras leaves) always considered an herbal supplement for ailments. Like anything like that it should be consumed in very small quantities.
No matter your taste you have to ait that Hank Williams song is a American classic tune.
As for coffee &chicory, must be drunk cafe au lait style preferably in New Orleans.
Read here on the board recently where some said they drank 100% chicory coffee and said it was very bad.
Well, that is not coffee. That is s coffee substitute because it has no coffee in it. I can't imagine how bad it tastes. Very bitter for sure.
