Kitchen duties

I came across BOTH a nice looking Eye of Round Roast AND ~5 lbs of thick cut Pork Loin Chops Sunday Night at the local grocery store. Monday was...well, MONDAY ALL frick'n day yesterday, so I am trying to "process" this meat today (in my "spare time").

I have been making my own Breakfast Sausage for about 30 years now, and haven't bought "hamburger" for nearly as long. So:

I have everything cut up now?ÿ(trimmed and cut into ~3/4 inch cubes), Bacon (for the Hamburger) cut into 1 inch squares, and Pork Lard into ~1/2 inch cubes (for the Sausage). No seasoning for the Burger (this time), and the spices for the Sausage measured and mixed. I will start grinding in about an hour or so, and then "package" everything up later tonight.

Another of the "bennies" of working at home, I can spread the kitchen duties across the entire day/night?ÿ.

Can't hardly wait for the Sausage n Eggs tomorrow.

It's hard to deny that after a good frost is what we call down here, "hog-killin' weather".?ÿ Fresh ground piggy only happens every once in a while.?ÿ You're making me hungry now.

My favorite pork sausage recipe:?ÿ Baked acorn squash on the half-shell filled with?ÿa pork sausage/ cornbread stuffing mixture.?ÿ Don't hold back on the sage or the red pepper flakes. 😉

My favorite part of hog killings' was always the cracklins. ?ÿEnough cholesterol in one to last a week

Our 14 year old Australian Shepherd, actually belongs to youngest daughter in college, had a few days about 6 weeks ago where he was much less active and alert than normal and wouldn't eat. ?ÿAfter a couple days he was back to his old self, ripping around the house in the morning and molesting the cat. ?ÿWeek before last he lapsed back into moping mode, so I took him to the vet. ?ÿSince it came on so suddenly, I didn't think it was just old age. No fever, no vomiting, no diarrhea, no obvious pain when he felt his abdomen, just no energy. ?ÿThought it was possibly an infection so put him on antibiotic. ?ÿAfter a week he wasn't any better so took him back. ?ÿNo heartworms, but the blood test showed red blood cells extremely low, white cells normal. ?ÿProbably some sort of internal bleeding, so he gave me a bottle of prednisone and he said try feeding him beef liver to get his iron up. ?ÿAll I could find was packages with 4 pieces sliced thin and frozen, so I thawed out a piece and gave it to him. ?ÿTurned his nose up at it, so I thought maybe he would eat it if warmed up (I actually like liver occasionally if its hot, but not cold). ?ÿTurns out a thin piece of liver will cook pretty good in a microwave in about a minute. ?ÿHe gobbled it right up, along with a hot dog with the steroid in it. ?ÿSo now I'm cooking him 2 pieces of liver and a hot dog every morning and night. ?ÿHe won't touch the canned food he'd been eating. On the bright side he was chasing a deer out of the yard when I came home this afternoon. ?ÿ

My kitchen duties are extremely limited.

Someone asked me last week if I even knew which button to push to turn on the dishwasher.

I replied No, but I know which buttons to push to piss her off!
