It begins with:

"Start with a rue".

When I lived in Houston our next door neighbor was Cajun and that woman could COOK. Any time I asked for a recipe it ALWAYS began, Start with a rue.

There are the traditional Cajun recipes that many like Dan holds on to and are great.

The true joy of Cajun Cookin is that most of the meats are interchangeable in most any of them or can be substituted to most any meat of your choosing according to one's taste.

I only take my time when making gumbo for the Super Bowl every year. Mostly I am a Zatarain's follower.

I a mostly suprized by the fact that mudbugs (aka, crayfish) have not been mentioned yet. They are great in Jambalaya.

Yep, but I will tell you that Zatarain's does a good job at making a dehydrated roux. From scratch is always best, but my children have never said to me, "I don't want that, you did not start with a roux", but none the less, you are 100% correct.

If you ever see a guy with Oklahoma vanity plates, that say "ROUX", that sort of looks like Huey P. Long, stop him and tell him hello, he is my cousin.

Going to be making a big old pot of alligator sauce piquant for Easter dinner with my family, we will also be dining on a couple of sacks of oysters.

Jesus H. Christ on a bicycle you use that stuff? Oh, the humanity. You are supposed to use LOUISIANA HOT SAUCE. I’m starting to seriously doubt your “roots” with respect to your proclamation of residence in Louisiana. 😉 🙂

Dang Daniel

You're making me hungry. People joke about the things that Acadians eat, but if it's cooked right most anything (except Nutra) tastes good. A friend of mine left here Sunday headed for Morgan City, they're demolishing some oil field piping or something like that. They'll be living on a barge for a couple of weeks, but I'm SURE they're gonna have a good cook aboard.

For Easter dinner we will probably have baked ham, scalloped potatoes, deviled eggs, sweet pickles and green bean casserole. Pineapple Upside-down cake for dessert.:clap:

Morgan City?

I'll tell you a tale about Morgan City.

Picture if you will, an elderly Boudreaux and his hard of hearing wife, Mrs. Boudreaux, sitting at an oyster bar in the French Quarter of New Orleans, eating oysters on the half shell, drinking cold beer.

Sitting next to Boudreaux is a guy from Pennsylvania, one of those uppity types, doing the same thing, we will call him Mr. Smith.

After a while Mr. Smith starts to talk with Boudreaux asking him, "Where are you from with that strange way of talking?",

Boudreaux said, "I am from South Louisiana", to which Mrs. Boudreaux said, "Huh? What he say? Huh?"

Boudreaux responded in a loud voice, "He ask where we from", at which Mrs. Boudreaux responded, "Oh, OK".

Mr. Smith said he liked it down in New Orleans and asked ol Boudreaux exactly where in South Louisiana they where from.

Boudreaux told him they where from Morgan City and Mrs. Boudreaux said, "Huh? What he say? Huh?"

Old Boudreaux raised his voice a bit higher this time and said, "I told him we was from Morgan City!"

Mrs. Boudreaux said, "Oh, OK"

Mr. Smith continued the conversation with a memory, he said, "You know, I have been to Morgan city, as a matter of fact, I had sex with a girl from Morgan City, it was probably the worst sex I ever had"

Mrs. Boudreaux asked "Huh? What he say? Huh?"

And Boudreaux yelled out,............

"HE SAY HE KNOW YOU!"

Mr. McCabe

What's the official Louisiana ruling on Crystal hot sauce? I'm a long-time Tabasco user, but I've been using Crystal to cook chicken wings and other parts in and serve with grits. Am I wrong? I hope I'm not being too controversial here.

No, no, not at all, you are one of my favorite libbies. 🙂

Personally, I use Tabasco sauce on just about everything, I find it spicier then Louisiana brand hot sauce, which like you say, is great with wings and certain dishes.
About the only thing I use Louisiana brand on is raw oysters.
Both are made in Louisiana, so no harm, no foul.

PS. My dad is Mr. McCabe, I am known by just about everything else.
