which material knife would be better to carry for hunting, carbon steel knife or stainless steel knife, and why?
Carbon steel for fire starting.
Carbon steel.......but it does require care. Carbon steel will corrode easily, stainless will not.
Stainless will not work with a magnesium fire starter.

There is something to be said about a tool that requires a little maintenance; if you have to take care of something, you tend to value it more and treat it less as something that's disposable?ÿ(even if it's a $15 pocket knife). ?ÿ
I have a Case XX 4 1/2 in butcher knife mom gave me at age 12 that was used on every deer and hog I've skinned and cutup. It takes and keeps a strong sharp edge and I can use most anything from a wet stone to a diamond stone or Arkansas rock to sharpen.
The Case XX 3 blade knife that I bought at age 14 is the same way and both have a dark color most of the time unless I take steel wool or similar to clean the blade. At our 10yr school reunion I had to put it back in my pocket because one of my classmates wife was gettin sickly watchin me slice my meal with a dark blade. Apparently she had never seen anything except stainless steel...........
The Case XX 5bar stanless knife that I carry now is a one blade that locks in position. It takes more time and paying great attention to the angle of sharpening and I get my best results using a Barbers Pride finishing stone.
The stainless blade does not compare to the ease of sharpening of the carbon blade.
I have one demascus steel knife and I have never had to sharpen it ever.
My kitchen knifes are Old Hickory carbon steel knives and they stay sharp a long time.
It may sound strange but an electric eraser is a good tool for carbon steel blades.?ÿ For minor rust spots a mylar eraser is good and for larger rust areas the old abrasive erasers work well.?ÿ Of course you need to add a drop of good oil when you're finished.?ÿ My every day knife is stainless though.?ÿ For a good way to spend a few hours check out the website for Smoky Mountain Knife Works.

If I had to choose one blade I would implode. Most of mine are carbon steel. The utility types and bone breakers are parkerized or blued. The only stainless blades are for fishing.
