"both sides of the paper" is called a spread: "two facing pages in a book or other publication." As in: "Hey, do you want me to use a page or a spread for this sketch?"
I had a field book for a few days last year, but it fell out of my pocket and I decided it was never meant to be. I have never used one. I use codes to connect up my linework and let the data collector store the data. I run levels in my head 😉
I agreee with the others about using a tablet. I use my android phone and Ipad (sometimes) and save all of my plats, deeds, tax maps, etc.
