Hi guys i have a question for you, how and how much does GSD variation affect the accuracy of an orthophoto mosaic? (I am native Spanish speaker, that's why my basic English)

The GSD (Ground Sample Distance) is the distance on the ground between the centers of adjacent pixels in your orthomosaic. So there is a very direct relationship between the GSD and the accuracy.
The GSD that you achieve in an orthophoto is a function of the camera resolution, lens size, altitude, and overlap, The following link is to a nifty tool from Trimble that shows you the GSD that you will achieve with their various platforms based on your flight characteristics.
