Fair.

Sausage of your choice: kielbasa, bratwurst, Italian, cotecchino, sauscion, etc

2 medium to large sweet peppers ( orange, yellow, red, green, even purple ???œ) thinly sliced

One large onion thinly sliced

6-10 cloves crushed garlic

Spices( this is where your freak flag can fly)

I used teaspoon of fennel seeds, tablespoon of thyme

Teaspoon of Aleppo pepper ????‹? to finish.

Salt to taste ( less is more here)

Beer. For cooking. Drinking is your decision. Don't burn down the house.

I used a can of fosters. That's a bomber 25.4oz?ÿ

You can use any beer, outcomes will vary, this is your freak flag remember.....

Add 2 tablespoon of EVOO and half a stick of butter to a large rondo or dutch oven and melt, don't scorch unless you like that flavor.

Add peppers, then onions, spices, sweat till translucent on low to medium heat, add the crushed garlic and mix, then?ÿ add the sausage on top so it starts steaming the casing. When the outside of casing is turning noticibly, flip and increase the heat.

While the second side is steaming gently stir the veggies and cover sausage.?ÿ

As the veggies start to brown, stir and cover sausage and then drown in beer, ( deglaze like Randy Marsh did) turn heat to medium for simmer and cook down the beer. Stir and keep heat low enough to not brown again.

Once beer is cooked off and leaves the veggie tapenade, fire up the grill and add the smoky goodness of grill marks.

Eat in a Kaiser roll, over rice, pasta, or alone.

No pictures yet but I just put a large rack of ribs on the smoker.?ÿ Suppertime will be wonderful around here.

I don't really care either way because I don't talk in public anymore for fear of getting (pick whatever suits you) shot, stabbed, spit on, cald a bad name, beat up or worst of all attacked by a "karen". ?????ÿ

@flga-2-2 Probably peach icecream.?ÿ And it IS?ÿpronounced like it is spelled PECAN (pea can).?ÿ I grew up next to a 40 acre pecan orchard in the state that produces the most pecans.

Emeril LeGasse, the famous chef, says the pronunciation is peecahn, that only truck drivers have pee cans.
