Yeah, in the Middle East, they have a much higher status for sure. To be fair, the Kofta are lamb/bison.

A friend rode along with a fellow taking a big trailer load of goats and sheep to an ethnic slaughterhouse in Atlanta several years ago.?ÿ They cater specifically to the Middle Eastern market.?ÿ People would come to the facility, select the animal of their choice and would be directly involved in the killing of the animal and in some cases gathering a certain quantity of the fresh blood in a time-honored religious manner.?ÿ One thing he found strange was that many of those involved were wearing their best clothes and shoes while doing this.?ÿ Different customs for different people.?ÿ The world is definitely a big place.
I have this discussion with my wife every year as we dig into a ham. I personally would prefer to eat lamb but she is rather set in her ways!
