Is there a toggle to turn off the automatic copy of the post you are replying to? On the computer I can easily highlight and delete but on my phone that's a pain. Just wondering.

Slightly off-topic, I discovered today that if I highlight some text in a post and then hit the Reply button, I'm offered the option to quote only that text in the reply. Very cool!
Ok, I get that, but if I am replying to a comment nested in the thread, it auto-quotes the whole thing.

That's what the reply button does, so you can reply directly to that person. Otherwise, you just scroll to the bottom and start replying without any quoting.
If you only want to quote part of a message, you can select the text you want to quote, then a little "+Quote | Reply" button will pop up next to the selected text so you can add to multiquote or reply only to the selected text.
