Got some fresh Gulf shrimp and Andouille. Fixin' to make a pot o' gumbo, beau coup.
Sorry, no file, can't stand it.
Tomorrow is another traditional American dish, hot dogs. These are pretty special, according to the package they are apparently made of beef and ground-up Hebrews. :snarky:
Saturday was the big meal
Grilled Pork ribs, cole slaw, potato salad and baked Boston beans with brown sugar and heavy with onions.
Left overs will never make it to Monday.
I ate 3 lbs. of crawfish today. Spiced up well by the local grocer.
Had to chase it with a glass of milk to soothe the burn.
Smoked St Louis style ribs for about 8 hours. Kept the smoker hot and threw on a Honey Ham for tomorrow. Really liking the new smoker.
My son has a baseball tournament this weekend, so cooking (along with most everything else) is taking a back seat to baseball. Tonight was leftover chicken chili (my wife wouldn't touch it, said it was too old; no fuzz and no funny smell, so good enough for me) and leftover roasted carrots and potatoes. Good enough to fill the belly, and easy enough to suit my energy level.
Roast beef with Vidalia onions, portabella mushrooms, and carrots, cooked in a Dutch oven for about four hours at 225. Fresh corn, cut off the cob and cooked low and slow, fresh green beans and new potatoes.
I just put up 6 dozen ears of corn just to start for next winter. Now for the squash, peas and beans when they start coming in.
