Found a couple of beauties this morning, about 10 lbs. total. Looking for info (besides Google-been there already) on preparation and/or preservation. AKA Maitake.

I would think that you got the info you needed from a Google search.
Never had HenOthewoods, but I have heard of them.

I pick chanterelles. I have a spot in the boonies along a creek. It is like a chanterelle sanctuary.. It is a short season (4-6 weeks) here depending on the amount of rain.
If I need to preserve any extra , I use a food dehydrator.
results are satisfactory or as good as it gets.

I got the dehydrator in a trade.

Someone , wanted to hook me up with a Chicago rest and I would ship FedEx overnight to them during the season. Too much , hassle.
I did sell briefly to a guy in New Orleans who supplied local restaurants.
He turned out to be kind of a jerk so I stopped doing it.
Once, he told me that chanterelles were out of season at the time. and told me that I was Beessiing him.
Next day, I brought him 5lbs fresh. He was salivating because he knew that he could get top $ for them. he was probably making a lot of money from my labor so I stopped supplying him. ; )

you can grow sh*takes here.

I have picked oyster mushrooms here when I have come across them. Kind of rare. I only looked for them on days when there have been a lot of fog in the morning.

But chanterelles are plentiful here. I have picked them in the city (park) and suburban lawns.

chantorelles

I thought chantorelles were a nothern thing. I have a few spots I pick them each year; usually near mountain streams. they go good w. native brook trout.
