Daddy’s MoJo Chicken

IMPORTANT!!! WASH YOUR HANDS AND DON'T LICK YOUR FINGERS OR PICK YOUR NOSE DURING PREP!(or scratch any other orifice)

Stuff you need:

1 roasted chicken (Publix, Food Lion, stolen from your neighbor, etc.)
1 can diced tomatoes with onions (16 oz)
1 can sweet corn (16 oz)
1 box Zatarni’s New Orleans style rice w/red beans
2 and ½ cups water
2 and 1/2 quart pot with lid

Prep and cooking:

Pull all the skin off the chicken and discard (or give it to the dog, cat, rat, snake, etc.)
Remove chicken from bones and place on a clean plate (discard bones, not to the dog, unless the canine lives outside. Otherwise you will be cleaning up dog poop (diarrhea) everywhere.

Add tomatoes, corn and water to pot and bring to a boil (keep the lid on until it boils)
Remove from heat, add chicken, rice then stir, bring back to a boil then reduce heat to simmer,(low) stir, cover, and in 25 minutes it’s ready to eat AFTER 5 minutes of cooling.

Use Louisiana Hot Sauce ONLY not others, to add some heat,

Serve with toasted garlic bread and sweet tea, or lot’s of beer!
