Looking for a good mentor(s)

I would recommend looking at a government agency--local, state, or federal. You mentioned your age. I agree with Frozen, excepting the assertion that public workers hold lower prestige, at least in my estimation.
In my limited experience people train you to perform tasks that make them money. If you want to learn legal surveying you need to find someone who you will make money for by doing that work for them.
