My wife has been cooking all day in preparation for the arrival of family tomorrow. A few minutes ago she asked me to stir the bechamel sauce for chicken pot pies while she went to look for something. She explained that the sauce has to be reduced from 6 cups to 4 cups, "which is this deep in the pan," showing me a chunk of carrot. She had measured 4 cups of water into the pan before starting the sauce, cut off a carrot to fit the depth, dumped the water and began adding the real ingredients.
So in case anyone was wondering, the depth of 4 cups is equal to one carrot stub.

Good one, I had some Korean friends who when cooking rice would put there hand in the pot as flat as possible, given the size of the pot, and gauge the right amount of water by being just above their second knuckles...Happy Holidays!
