Cooked up one off the back straps off my mule deer.
Cut it in half. Then split it open put in Philadelphia cream cheese, onions , peppers, spices . closed it up and covered the top with bacon. baked for 40 minutes then broiled for about 10 to crisp the bacon....~ it's all gone now...

Are those split banana peppers? Does the cream cheese melt and imperviate the meat, as well as the pepper juice?

I'm not really a pepper aficionado- they're the mini- peppers SWMBO bought in a bag from Costco- I take them raw in my lunch sometimes... the cream cheese retains it's shape but gets very soft- it was on top of the onions, so only some of it came in conact with the meat during the cooking process. I kind of got shlathered all over the meat during the cutting and serving process. No one complained.... I did two dishes - this one I wove the bacon and then spinkled coconut brown sugar on top before I turned on the broiler. The other was a longer piece and I put montreal steak seasoning on the top of that one.
