So a couple of weeks ago my wife bought some local apple cider from an orchard we hadn't purchased from before

They use a UV system rather than pasteurizing. Apparently the wild yeast survives this much better than heat pasteurizing, because when I opened the half empty jug last night it sounded like I was opening a bottle of soda...it's semi carbonated, semi sweet, and I'd guess 2% - 3% alcohol. 😉
I think we need to ride back out this afternoon for another gallon or two.
