Making Jalepena cheddar elk stix. Ground and stuffed yesterday- trying to smoke them on the traeger today. Regulating the temperature is a bit of a problem because it??s only about 5^f right now.?ÿ

What kind of fat did you mix into the elk meat to 'bulk' or fatten it up or is that only for sausage making?

@jitterboogie just lean elk- no suet or pork- I may try some brauts next and that will involve some of our home grown hog.
