Family Trip to Acadiana

Growing up in Maine near the border with Quebec, in school I learned about the expulsion of the Acadians along the east coast. I've been curious about them for awhile, so I'm taking the family on a road trip to Lafayette, Louisiana to see how the Acadians are getting on.

If anyone is familiar with South Louisiana, I'd be grateful for some recommendations for Cajun food, music, museums, wildlife viewing, etc.. I've booked a charter leaving out of Cypremort Point to catch some redfish. I'll also be on a mission to set a crawfish trap and catch at least one small meal. From what I gather, the traps have to have a specific mesh size.

Any pointers would be appreciated.
